The pearls are cooked in brown sugar syrup until deeply caramelized, then the syrup is drizzled dramatically down the cup before adding fresh milk. It's sweeter than classic boba—essentially a dessert drink—but the visual impact is undeniable.

Ingredients
- 1/2 cup dried tapioca pearls
- 1 cup dark brown sugar (muscovado if available)
- 1 cup water
- 2 cups fresh cold milk
- Ice cubes
Steps
- 1Cook tapioca pearls in boiling water for 15-20 minutes until translucent
- 2Drain and set aside
- 3In a saucepan, combine brown sugar and 1 cup water
- 4Bring to a boil, stirring until sugar dissolves
- 5Add cooked pearls to the syrup
- 6Simmer on low for 20-30 minutes, stirring occasionally
