The Story
Dong Ding ('Frozen Summit') oolong represents Taiwan's traditional style before high mountain oolongs dominated the market. These teas are roasted over charcoal, a time-intensive process that adds layers of caramel, toast, and warmth. True Dong Ding comes from a small area in Lugu Township where the technique has been passed down for generations. As modern tastes have shifted toward lighter, floral oolongs, traditional Dong Ding has become rarer and more precious.
