The Story
Kahwa is Kashmir's signature drink, served at weddings, celebrations, and to honored guests. Unlike the rest of India's black tea chai, Kahwa uses green tea—a legacy of the ancient Silk Road trade routes. Saffron from Kashmir's own fields tints it golden, while crushed almonds add richness. It's traditionally brewed in a brass samovar (samovar) and served in small cups. One sip transports you to the Himalayas.

Ingredients
- 4 cups water
- 1 tablespoon Kashmiri green tea (or any green tea)
- 10-12 saffron threads
- 8-10 almonds, blanched and crushed
- 4-5 green cardamom pods, crushed
- 1 small cinnamon stick
- 2-3 cloves
- Sugar or honey to taste
Steps
- 1Bring water to a boil in a pot or samovar
- 2Add cinnamon, cloves, and cardamom, simmer 2-3 minutes
- 3Reduce heat, add green tea and saffron
- 4Steep for 5-7 minutes—don't boil
- 5Add crushed almonds
- 6Strain into small cups
- 7Sweeten with sugar or honey to taste
- 8Garnish with a few saffron threads and almond slivers

Brewing Tips
Use Kashmiri green tea if available. Crush almonds finely. Quality saffron makes all the difference—Kashmiri saffron is world-renowned. No milk in traditional Kahwa. Honey can replace sugar.
