The Story
Attaya is Senegal's answer to the coffee ceremony. Introduced by Moroccan traders, it evolved into something uniquely West African. The ritual involves three rounds: the first (bitter like death), second (mild like life), and third (sweet like love). Each round uses the same leaves but more water and sugar. The foam created by pouring between cups is essential—it's considered bad form to serve flat attaya. The ceremony can last hours.

Ingredients
- 3 tablespoons Chinese gunpowder green tea
- Fresh mint leaves (optional)
- Sugar: 1 tbsp (round 1), 3 tbsp (round 2), 5 tbsp (round 3)
- Water for three brewings
Steps
- 1ROUND 1 (Bitter): Add tea to small pot with 2 cups water
- 2Boil for 15-20 minutes until very strong and dark
- 3Add 1 tablespoon sugar
- 4Pour between two cups repeatedly from height to create foam
- 5Serve in small glasses with foam on top
- 6ROUND 2 (Mild): Add 2 more cups water to same leaves
- 7Boil for 10 minutes, add 3 tablespoons sugar
- 8Froth and serve as before
- 9ROUND 3 (Sweet): Add final 2 cups water
- 10Boil for 5 minutes, add 5 tablespoons sugar
- 11This round can include fresh mint
- 12Froth generously and serve

Brewing Tips
