The Story

Teh Tarik means 'pulled tea' in Malay, named for the dramatic pouring technique where tea is transferred between cups held far apart. This aerates the tea, creating a frothy top and cooling it to drinkable temperature. Teh Tarik stalls are social hubs; watching a skilled 'tarik' is street theater. Malaysia declared it the national heritage drink in 2012.

Make It at Home

Ingredients

  • 3 tablespoons black tea dust (or very finely ground black tea)
  • 1.5 cups water
  • 4 tablespoons sweetened condensed milk
  • 2 tablespoons evaporated milk (optional, for extra richness)

Steps

  1. 1Boil water in a saucepan or kettle
  2. 2Add tea dust and boil for 3-4 minutes until very strong
  3. 3Strain into a metal mug or heat-proof pitcher
  4. 4Add condensed milk and stir well
  5. 5Now the fun part—the 'tarik' (pull):
  6. 6Hold an empty cup in one hand, the tea in the other
  7. 7Pour tea into the empty cup from about 1 foot height
  8. 8Pour back into the first cup, gradually increasing the distance
  9. 9Repeat 4-5 times—the tea should develop a frothy head
  10. 10Pour into serving cups and enjoy while hot and frothy

Brewing Tips
