The Story
Libyan tea stands apart from its North African neighbors. 'Shai ahmar' (red tea) uses black tea instead of green, brewed strong and sweet. The signature? Roasted peanuts floating on top, adding crunch and nuttiness. In Libyan homes and cafés, tea is served in three rounds like Mauritanian tradition, each progressively sweeter. The foam on top (created by vigorous pouring) is a mark of skill.

Ingredients
- 3 tablespoons strong black tea
- 4 cups water
- 4-6 tablespoons sugar (more for later rounds)
- 1/4 cup roasted peanuts (unsalted)
- Fresh mint (optional)
Steps
- 1Add tea and water to pot, bring to boil
- 2Boil for 5-8 minutes until very strong
- 3Add sugar (less for first round)
- 4Pour from extreme height between pot and glass to create foam
- 5Return to pot, repeat pouring 4-5 times
- 6Pour into glasses with foam on top
- 7Float roasted peanuts on the surface
- 8For second round: add water to same leaves, more sugar
- 9Third round: even more sugar, sometimes mint
